Overnight Banana Bread Oatmeal

My friend, Carrie Vitt, posts a lot of wonderful recipes on her website Deliciously Organic. Since many of you have been asking for breakfast recipes, I thought I would share this one with you. ​You can serve this oatmeal cold, but it tastes really yummy heated with toppings like toasted pecans and chia seeds.
​Prep time: 10 minutes
Cook time: 5 minutes
Total time: 15 minutes
Ingredients:
  • 2 ripe bananas
  • 1 cup organic, gluten free rolled oats
  • 1 ½ cups full-fat coconut milk
  • ¼ cup plain, full-fat yogurt (or coconut/almond milk yogurt for dairy-free)
  • ¼ teaspoon ground cinnamon
  • pinch of Himalayan salt
  • 1 teaspoon vanilla extract

​Preparation:
  1. Place the bananas in a medium-size bowl and mash with the back of a fork.
  2. Stir in the oats, coconut milk, yogurt, cinnamon, salt, and vanilla.
  3. Cover and leave on the countertop overnight. In the morning, pour the mixture into a medium saucepan and heat on low until warm.
  4. Serve with toppings of your choice: sliced banana, chia seeds, toasted pecans, ground flaxseed, or unsweetened coconut flakes.

This recipe does not require the unnecessary costs. However, we get a very tasty and healthy dish as a result. Such a breakfast will certainly please.

I will try to cook it for sure. i like little experiments. That is always great to realize that we have to take care of our body.
